Half at the Hamptons Training – Week 8 (And a Delicious Dinner)

This was the only week where it actually felt like winter in Boston. There was snow fall when I was coming home from work on Monday and Thursday, and then about 4 to 5 inches of accumulation on Saturday. That, along with some tight thigh muscles, made for a bit of a low week. I’m optimistic that the rest of the month will look better. Smile

Monday: Recovery from the 9 miles on Sunday
Tuesday: Same upper body workout that I did last week
Wednesday: 4 miles @ 36 minutes @ 9:07 pace
Thursday: 2 miles with Grace @ no timing
Friday: Closed on the house!!
Saturday: 1.42 miles in the snow
Sunday: 8.5 miles on the treadmill

Week mileage: 15.92
Total mileage: 129.71

And the Sunday long run was supposed to be 10 miles, but dang, treadmills are tough.

We’ll get ‘em next time!

Dinner tonight was supposed to be TJ’s frozen Mandarin Orange Chicken, but when I went grocery shopping, these were on sale.

And dinner was scrapped. I made baked pork chops instead. With these as side items, along with some broccoli.

For the pork chops I dunked them in a mixture of 1 egg with a bit of milk, then in some Italian style breadcrumbs before placing them in a sauté pan for about 5 minutes on both sides until they browned. They were then transferred to the oven at 325* for 25 minutes. They came out so moist and delicious! I’ve never been all that successful with baking anything that has breadcrumbs so this was a win for me. And the sides were great. I loved the tater tots! Brought me back to my cafeteria days. Smile with tongue out

Hope everyone has a great week! I have a 7-day work stretch before my next days off. This Friday, David and I are going to another home show! Love it!

I love the Alexia brand tater tots, especially the sweet potato ones!
